Rocio No. 2 is essentially a pineapple delivery system.
Rubén Correa's Papayo from La Primavera in Acevedo, Huila — naturally processed, 180 hours in an anaerobic fermentation tank. It comes out aggressively tropical, genuinely juicy, and absolutely committed to the pineapple bit. Then the panela kicks in. Unrefined whole cane sugar, deep and caramelised, and suddenly the whole thing rounds out into something surprisingly grounded.
Pineapple on pineapple, then something altogether more interesting. Weird, but in the best possible way.
Would probably drink it again.
