We’re a husband-and-wife team roasting out of a cold garage in Edinburgh.
We’ve put everything we own into this brand. If it doesn't work, it’s beans on toast for the foreseeable. Although, knowing Daniela, she’ll still find a way to secure a truckload of smoked salmon while I’m scraping the bottom of a Heinz tin.
One of us is a musician and a total control freak who’s obsessed with the sensory "hit" of a perfect roast. He handles the creative side because he’s allergic to anything that involves a spreadsheet or a letter from HMRC. The other is a genius who cares so deeply it actually hurts. She doesn't stress about the science—she stresses about the bills, whether Douglas (the indoor cat) just sneezed a bit too loudly, and the general weight of making sure Gallus is worth the gamble.
We didn't start this to be "different"—we just realised we couldn't go back to the mundane. Everything you see—the black bags, the minimalist labels, the meticulous sensory maps—is just how we wanted things to be. It’s tactile and intentional and it’s probably a bit over the top for a morning drink. We’re fine with that.
We’ll be here with our bougie cats and our Chemex, enjoying the results of our own obsession. If you’re keen for a cup, crack on. If not, that’s cool too. You do you.
